Micro Lot - Timor Leste Honey Process Daurfusu

This lot is from the Daurfusu Wet Mill located in Dukurai village, Letefoho District. Traditional processing in Timor is wet-hulled where the farmers do the wet process at home and deliver parchment to the mill for further processing. The entire cherry was delivered to the mill for processing with this lot. Growing altitudes are between 1400 and 1600 MASL.

Cupping Notes:

• Dry Grounds: Floral, fruity, sweet, creamy.
• Wet Grounds: Sweet, date, floral.
• In the Cup: Candied fruit, tea, earth.
• Mouthfeel: Soft, round, and creamy.
• Finish: Lingering with soft fruit tones.
• Varietals: Typica and Timor Hybrids.
