The western region of Honduras where this coffee comes from enjoys distinct rainy and dry seasons. This facilitates the growth of beautiful, ripe cherries that can be washed processed, and laid out to dry in the sun after the harvest. The combination of microclimate, rich clay soil, and warm sunlight with careful washed processing coupled with our distinct roasting style offer a lush, sweet cup with fruit and nut tones.
Cupping Notes:
- Dry Grounds: nutty, caramel, spice.
- Wet Grounds: Gentle stone fruit, cocoa, nuts, and cinnamon.
- In the Cup: Roasted almond, raw sugar, pomegranate.
- Mouthfeel: Silky, round, syrupy.
- Finish: Moderately lingering, soft.
- Varietals: Lempiras, Caturra, Catuai, IHCAFE 90.
