November: El Salvador Dry Process Finca San Luis
Finca San Luis is in Ataco, Ahuachapan, near the Santa Ana volcano. The San Luis farm is roughly 25 hectares of well-shaded land. The altitude ranges from 1280 to 1400 MASL. The H1 cultivar is a hybrid of Sarchimor and the Ethiopian heirloom Rume Sudan. A lot of hand sorting is employed before the cherry is even delivered to the mill where it is dried on raised beds for 15-20 days.
Cupping Notes:
- Dry Grounds: Floral. Fruity, bergamot zest, brandy.
- Wet Grounds: Bergamot, brandy, floral, and fruity.
- In the Cup: Tangy, fruit, floral, and spice.
- Mouthfeel: Soft and clean.
- Finish: Moderately lingering.
- Varietals: Centroamericano H1.
